I’m definitely feeling it. -Spring fever, that is.

Today I baked chocolate chip – banana bread, which led to me wanting to start baking us fresh bread (gluten-free, for mother’s celiac needs), which led to making our own neopolatan pizza’s, which led to wanting more fresh ingredients for those pizzas, which led to gardening.
Now, I have fully planned out my spring, and summer months. I’m thrilled that I will be gardening, baking, and so much more this year.
I have wanted to do these things for years, but have put off the baking because it has to be gluten free, which means usually a lot more ingredients and prep. However, now that there are 1:1 ratio gluten-free bread flours, all-purpose fours, and pizza flours, things are a little simplier.
The gardening has been something I want to involve myself in every summer, but the soils on our land our sandy, and would need a lot of treatment to grow something. So to combat that, I am going to try container gardening this year. We will see how it goes. I want to start with herbs, tomatoes, green peppers, cucumbers, and lettuce. I may let the gardening get a little out of control and try a variety of other things as well. Maybe I’ll even be so inclined to treat the soil and grow some pumpkins for fall.
It may seem like I am taking on a lot, but I freed up alot of my afternoon and evenings recently, and these will be welcome additions to my day.
With today being Sunday, I should be relaxing and resting, but I am actually feeling very energized with all my ideas, and since that kind of energy is kind of rare, I think it’s a house cleaning kind-of-day. I’ve already got my favorite playlist blaring out of the speakers, and my mood is up. Time to tackle my least favorite task of the week – cleaning. Wish me luck!
